For the Chicken:
- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp salt
- tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp dried basil
- tsp red chili flakes (optional, for spice)
- 1 tsp Italian seasoning
- 1 tsp lemon juice
For the Sauce & Toppings:
- 2 garlic cloves, minced
- 1 cup cherry tomatoes (halved) or canned diced tomatoes
- cup tomato sauce
- 1 tsp balsamic vinegar (for extra flavor)
- cup mozzarella cheese (shredded)
- 2 tbsp Parmesan cheese (grated)
- Fresh basil leaves (for garnish)
1. Marinate the Chicken:
In a bowl, mix olive oil, salt, black pepper, garlic powder, oregano, basil, red chili flakes, Italian seasoning, and lemon juice.
Coat the chicken breasts with the marinade and let them sit for 10-15 minutes.
2. Cook the Chicken:
Option 1: Stovetop MethodHeat olive oil in a pan over medium heat.Sear the chicken for 4-5 minutes per side, until golden brown.Remove the chicken and set aside. Option 2: Oven-Baked MethodPreheat oven to 200°C (400°F).Place marinated chicken in a baking dish and bake for 20-25 minutes or until fully cooked.
3. Prepare the Tomato Sauce:
In the same pan, sauté garlic until fragrant.
Add cherry tomatoes, tomato sauce, balsamic vinegar, salt, and pepper.
Cook for 5 minutes, until tomatoes soften.
4. Combine & Serve:
Return the chicken to the pan, coat with the sauce, and sprinkle with mozzarella and Parmesan cheese.
Cover and let the cheese melt for 2 minutes.
Garnish with fresh basil leaves and serve with pasta, rice, or salad.
For a richer flavor, let the chicken marinate for at least 30 minutes before cooking.
