For the Mochi Dough
- 1 cup mochiko (sweet/glutinous rice flour)
- ¼ cup granulated sugar
- ¾ cup water
- ½ teaspoon vanilla extract, optional
For Dusting
- ½ cup cornstarch or potato starch
Optional Filling
- ½ cup sweet red bean paste
- Fresh strawberries

Prepare the Filling
If using red bean paste, divide it into approximately 10–12 small portions.Roll each portion into a small ball and place them on a plate.If using strawberries, wash and dry them thoroughly before wrapping.Keep the fillings chilled while preparing the mochi dough.
Make the Mochi Mixture
Add the mochiko and sugar to a microwave-safe bowl.Pour in the water gradually while stirring.Mix until the flour and water form a smooth, lump-free mixture.Add vanilla extract if desired.
Microwave the Mixture
Cover the bowl loosely with microwave-safe plastic wrap or a suitable microwave cover.Microwave on high for 2 minutes.Carefully remove the bowl because it will be hot.Stir the mixture thoroughly with a wet or lightly oiled spatula.
Continue Cooking
Return the bowl to the microwave and cook for another 1–2 minutes.The mixture should become thick, glossy, sticky, and slightly translucent.Microwave power varies, so watch carefully and cook in short intervals if necessary
Prepare the Work Surface
Generously dust a clean work surface or large baking sheet with cornstarch or potato starch.Transfer the hot mochi dough onto the prepared surface.Be careful because the dough will be very hot and sticky.
Cool Slightly
Allow the dough to cool enough to handle safely.Dust the top generously with starch.
Divide the Dough
Use a knife or bench scraper dusted with starch to divide the dough into approximately 10–12 pieces.Keep the pieces covered with a little starch while working.
Fill the Mochi
Flatten one piece of dough gently with your fingers.Place a small ball of red bean paste or another filling in the center.Carefully pull the edges of the dough around the filling.Pinch the edges together to seal.
Shape the Mochi
Turn the sealed mochi over and gently roll it between your palms to create a smooth, round shape.Repeat with the remaining pieces.
Serve
Dust away excess starch before serving.Enjoy the mochi fresh at room temperature.
