Instructions
 

Prepare the Crust

  • Preheat oven to 325°F (165°C).Combine chocolate cookie crumbs and melted butter.Press firmly into the bottom of a 9-inch springform pan.Bake for 10 minutes.Allow to cool.

Make the Cheesecake Filling

  • Beat cream cheese until smooth.Add sugar and mix well.Beat in eggs one at a time.Add vanilla extract, peppermint extract, sour cream, and melted white chocolate.Mix until smooth and creamy.

Bake the Cheesecake

  • Pour filling over the cooled crust.Smooth the top with a spatula.Bake for 50–55 minutes or until the center is slightly set.Turn off the oven and allow the cheesecake to cool gradually.

Chill
