- 2 cups cooked white rice (preferably day-old)
- 1/2 lb (225g) pork (shoulder, loin, or ground)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (optional for depth)
- 1 tbsp sesame oil
- tsp white pepper or black pepper
- 1 tbsp vegetable oil (for frying)
- 2 eggs, beaten
- 1/2 cup diced onion
- 1/2 cup frozen peas and carrots (or chopped fresh vegetables)
- 2 cloves garlic, minced
- 2 green onions, chopped (for garnish)
Prepare Pork (Optional Marinade):Thinly slice or dice the pork and toss with 1 tablespoon soy sauce and a pinch of pepper. Let sit for 10–15 minutes if time allows.
Scramble Eggs:Heat a little oil in a large skillet or wok over medium heat. Add beaten eggs and scramble until just set. Remove and set aside.
Cook Pork:Add a bit more oil, then cook the pork until browned and cooked through, about 3–4 minutes. Remove and set aside.
Sauté Veggies:In the same pan, add garlic, onions, and mixed vegetables. Cook until softened, about 2–3 minutes.
Add Rice:Add in the rice, breaking up any clumps. Stir-fry for 2–3 minutes to heat through.
Combine Everything:Return eggs and pork to the pan. Add remaining soy sauce, oyster sauce, sesame oil, and pepper. Toss everything together until well mixed and hot.
Garnish and Serve:Sprinkle with green onions and serve hot.

You can substitute pork with chicken, shrimp, or tofu.
