Ingredients

For the Crust

  • 1½ cups graham cracker crumbs or digestive biscuit crumbs
  • ¼ cup unsalted butter, melted
  • 2 tablespoons granulated sugar

For the Pumpkin Filling

  • 1 cup pure pumpkin puree
  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 cup whipped topping, thawed, or freshly whipped cream

For the Topping

  • 1 cup whipped topping or freshly whipped cream
  • 2 tablespoons crushed graham crackers, optional
  • A light sprinkle of cinnamon
  • Chopped pecans or walnuts, optional

Instructions

  • Place the graham cracker crumbs in a mixing bowl. Add the melted butter and granulated sugar, then stir until the crumbs are evenly moistened.
Press the mixture firmly into the bottom of an 8-inch square dish or divide it among eight individual dessert glasses. If using a baking dish, compact the crumbs with the bottom of a spoon or measuring cup.
For a firmer crust, bake it at 350°F (175°C) for 8–10 minutes. Allow it to cool completely before adding the filling. For a completely no-bake version, simply refrigerate the crust for 20–30 minutes.
  • Place the softened cream cheese in a large bowl. Beat with an electric mixer until smooth and creamy, scraping down the sides as needed.
Add the powdered sugar and vanilla extract. Continue mixing until the sugar is fully incorporated and the mixture is free of lumps.
  • Add the pumpkin puree, cinnamon, nutmeg, and optional ginger to the cream cheese mixture.
Beat on low speed until everything is evenly combined. The filling should have a smooth consistency and a rich orange color.
  • Gently fold one cup of whipped topping or freshly whipped cream into the pumpkin mixture using a spatula.
Use slow, sweeping movements to retain as much air as possible. This helps create a light, fluffy dessert rather than a dense filling.
  • Spoon the pumpkin filling over the cooled crust and spread it evenly.
If you are making individual servings, layer the biscuit crumbs and pumpkin mixture in glasses or small jars. Leave a little room at the top for the whipped cream garnish.
  • Cover the dish and refrigerate for at least 3–4 hours. This allows the filling to firm up and the flavors to blend together.
For the best texture, prepare the dessert the evening before serving and let it chill overnight.
  • Just before serving, spread or pipe the remaining whipped topping over the dessert.
Sprinkle with cinnamon, crushed graham crackers, or chopped pecans for extra flavor and an attractive finish.
  • Spoon the chilled dessert into bowls or serve the individual glasses directly from the refrigerator.
Enjoy this creamy pumpkin treat after dinner, alongside coffee, or as part of a festive holiday dessert table.

Notes

  • Use pure pumpkin puree: Avoid pumpkin pie filling to maintain control over the sweetness and spices.
  • Soften the cream cheese: Room-temperature cream cheese blends more easily and prevents lumps.
  • Cool the crust completely: A warm crust can soften the creamy filling.
  • Fold gently: Avoid vigorous stirring after adding whipped cream to preserve the light texture.
  • Adjust the spices: Increase the cinnamon or add a pinch of cloves to suit your taste.
  • Chill thoroughly: The dessert needs enough refrigeration time to develop a firmer consistency.
  • Decorate before serving: Fresh whipped cream and crunchy toppings look and taste best when added shortly before serving.
  • Keep refrigerated: Because the filling contains cream cheese and dairy, do not leave the dessert at room temperature for extended periods.
