Instructions
Preheat your oven to 350°F (175°C).
Rub the beef roast with olive oil, salt, pepper, garlic powder, and onion powder.
Place the roast in a roasting pan with a rack and pour the beef broth into the pan.
Roast for 1.5 to 2 hours, or until the internal temperature reaches 135°F (medium-rare) or 145°F (medium).
Remove the roast from the oven and let it rest for 15 minutes before slicing.
While the roast rests, prepare the gravy: place the roasting pan on the stovetop over medium heat.
Whisk in the flour, stirring constantly until lightly browned.
Slowly add water or more broth, whisking to create a smooth gravy.
Simmer for 5 minutes, adjusting seasoning if needed.
Serve the sliced roast beef with warm pan gravy.
Notes
Allowing the roast to rest before slicing helps retain its juices and ensures a tender bite.
