Ingredients
  

  • 3-4 lb beef roast (sirloin, ribeye, or chuck)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup beef broth
  • 2 tbsp all-purpose flour
  • 1 cup water (or more broth for richer flavor)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Rub the beef roast with olive oil, salt, pepper, garlic powder, and onion powder.
  • Place the roast in a roasting pan with a rack and pour the beef broth into the pan.
  • Roast for 1.5 to 2 hours, or until the internal temperature reaches 135°F (medium-rare) or 145°F (medium).
  • Remove the roast from the oven and let it rest for 15 minutes before slicing.
  • While the roast rests, prepare the gravy: place the roasting pan on the stovetop over medium heat.
  • Whisk in the flour, stirring constantly until lightly browned.
  • Slowly add water or more broth, whisking to create a smooth gravy.
  • Simmer for 5 minutes, adjusting seasoning if needed.
  • Serve the sliced roast beef with warm pan gravy.

Notes

Allowing the roast to rest before slicing helps retain its juices and ensures a tender bite.
