- 2 cans (14–15 oz) salmon, drained and flaked (or 2 cups cooked fresh salmon)
- 1/2 cup breadcrumbs (plus extra for coating)
- 1 egg
- 1/4 cup finely chopped onion
- 2 tbsp chopped green onions or parsley
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 tbsp lemon juice
- 2–3 tbsp mayonnaise (for moisture)
- Oil for frying (vegetable or canola)
Prepare the salmon mix: In a large bowl, combine flaked salmon, onion, green onions/parsley, garlic powder, paprika, salt, pepper, lemon juice, mayonnaise, and breadcrumbs. Mix well.
Add the egg: Beat in the egg and stir until the mixture holds together. If too wet, add more breadcrumbs.
Shape patties: Form into 6–8 round or oval patties. Optionally, coat each patty lightly with extra breadcrumbs for a crispier crust.
Chill (optional): Place patties in the fridge for 15–20 minutes to help them firm up and hold their shape.
Cook: Heat oil in a skillet over medium heat. Fry croquettes for 3–4 minutes per side until golden brown and crisp.
Drain and serve: Transfer to a paper towel-lined plate. Serve hot with dipping sauce or sides.
