Instead of frying, the chicken is coated in a seasoned crumb mixture and baked, resulting in a lighter yet equally satisfying meal.

Ingredients
  

  • 4 chicken drumsticks or breasts
  • 1 cup breadcrumbs or crushed cornflakes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Mix breadcrumbs, paprika, garlic powder, onion powder, oregano, salt, and pepper in a large zip bag.
  • Lightly brush chicken with olive oil.
  • Place chicken in the bag, seal, and shake until coated evenly.
  • Arrange coated chicken on a greased baking sheet.
  • Bake for 35–40 minutes until golden brown and chicken reaches 165°F (74°C).

Notes

  • For extra crunch, use crushed cornflakes instead of breadcrumbs.
  • Skin-on chicken gives more flavour, but skinless works for a leaner version.
