- 4 cup mixed greens (romaine, spinach, arugula, or lettuce of choice)
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup shredded carrots
- 1/4 cup sliced bell peppers
- 1/4 cup crumbled feta cheese (optional)
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar or lemon juice
- 1 tsp Dijon mustard
- 1 tsp honey (optional)
- Salt and pepper to taste
In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, carrots, and bell peppers.
In a small bowl, whisk together olive oil, balsamic vinegar (or lemon juice), Dijon mustard, honey, salt, and pepper.
Drizzle the dressing over the salad and toss gently to combine.
