Ingredients
  

  • 4 cup mixed greens (romaine, spinach, arugula, or lettuce of choice)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup shredded carrots
  • 1/4 cup sliced bell peppers
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar or lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey (optional)
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, carrots, and bell peppers.
  • In a small bowl, whisk together olive oil, balsamic vinegar (or lemon juice), Dijon mustard, honey, salt, and pepper.
  • Drizzle the dressing over the salad and toss gently to combine.
  • Sprinkle with crumbled feta cheese if using.
  • Serve immediately and enjoy!
