  • 3 cups all-purpose flour
  • 2½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 5 large egg whites
  • 1 tablespoon vanilla extract
  • 1½ cups whole milk
  • Gel food coloring: red, orange, yellow, green, blue, and purple

For the Buttercream Frosting

  • 2 cups unsalted butter, softened
  • 6 cups powdered sugar
  • 4 tablespoons heavy cream
  • 2 teaspoons vanilla extract
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F (175°C).Grease and line six 8-inch round cake pans with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, and salt.In a large bowl.
  • Divide the batter evenly among six bowls.
  • Tint each bowl with one of the rainbow colors:
  • beat butter and sugar until light and fluffy.
  • Add egg whites one at a time, mixing well after each addition.Mix in vanilla extract.
  • Alternately add dry ingredients and milk until fully combined.
  • Pour each colored batter into a prepared cake pan.
  • Bake for 15–18 minutes or until a toothpick inserted in the center comes out clean.
    Allow layers to cool completely.
  • Place the purple layer on a cake stand.
    Spread a thin layer of frosting.
  • Slice carefully to reveal the beautiful rainbow layers and enjoy.
