Thaw the frozen spinach completely.Place it in a clean kitchen towel or cheesecloth.Squeeze firmly to remove as much moisture as possible.Excess moisture can make the pastry soggy. Heat a tablespoon of olive oil in a skillet.Add the onion and cook until softened.Add garlic and cook for another minute.Transfer the mixture to a large bowl.Add spinach, feta, parsley, dill, egg, pepper, and nutmeg.Mix gently until everything is evenly combined. Preheat your oven to 375°F (190°C).Brush a baking dish lightly with olive oil.Keep the phyllo sheets covered with a slightly damp kitchen towel.This prevents them from drying while you work.
