- 1 lb ground beef
- 1 packet taco seasoning
- ½ cup water
- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- ½ cup shredded cheddar cheese
- ½ cup black beans, drained and rinsed
- ½ cup corn kernels
- ¼ cup sliced black olives
- 1 avocado, diced
- ½ cup sour cream or Greek yogurt
- ½ cup salsa
- 1 cup tortilla chips, crushed
- ¼ cup chopped fresh cilantro (optional)
- 1 lime, cut into wedges
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
Add taco seasoning and water to the beef, stirring to combine. Simmer for 5 minutes, then remove from heat.
In a large bowl, combine the chopped lettuce, tomatoes, cheese, black beans, corn, olives, and avocado.
Add the seasoned beef to the salad and mix lightly.
Top with sour cream, salsa, crushed tortilla chips, and fresh cilantro if using.
Serve immediately with lime wedges for extra flavor.
