Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning
  • ½ cup water
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup shredded cheddar cheese
  • ½ cup black beans, drained and rinsed
  • ½ cup corn kernels
  • ¼ cup sliced black olives
  • 1 avocado, diced
  • ½ cup sour cream or Greek yogurt
  • ½ cup salsa
  • 1 cup tortilla chips, crushed
  • ¼ cup chopped fresh cilantro (optional)
  • 1 lime, cut into wedges

Instructions
 

  • In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  • Add taco seasoning and water to the beef, stirring to combine. Simmer for 5 minutes, then remove from heat.
  • In a large bowl, combine the chopped lettuce, tomatoes, cheese, black beans, corn, olives, and avocado.
  • Add the seasoned beef to the salad and mix lightly.
  • Top with sour cream, salsa, crushed tortilla chips, and fresh cilantro if using.
  • Serve immediately with lime wedges for extra flavor.

Notes

  • For a lighter version, use ground turkey or chicken instead of beef.
  • Customize with your favorite toppings like jalapeños, diced onions, or bell peppers.
  • To make it ahead, prepare all ingredients separately and assemble just before serving.
