- 1 pound ground beef
- 1 tablespoon olive oil, if needed
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning, or about 2 tablespoons homemade taco seasoning
- 1 can (14–15 ounces) diced tomatoes
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup frozen corn
- ½ cup beef broth or water
- 1 cup shredded Mexican-blend cheese or cheddar cheese
Heat a large skillet over medium-high heat. Add the ground beef and cook for approximately 5–7 minutes, breaking it apart with a wooden spoon until browned and fully cooked.
Add the diced onion and bell pepper. Cook for 3–4 minutes until the vegetables begin to soften.
Add the minced garlic and cook for another 30 seconds.
Sprinkle the taco seasoning over the beef and vegetables. Stir thoroughly so everything becomes evenly coated.
Stir in the diced tomatoes, black beans, and frozen corn.
Reduce the heat to medium-low and let the skillet simmer for approximately 7–10 minutes. Stir occasionally until the mixture thickens and the flavors come together.
Sprinkle shredded cheese evenly over the top.
Cover the skillet for 2–3 minutes, or until the cheese melts completely.
