For the Eggs and Potatoes
- 6 large eggs
- 3 medium potatoes
- 2 tablespoons oil
- ½ teaspoon turmeric powder
- ½ teaspoon salt
For the Curry
- 1 large onion, finely chopped
- 2 medium tomatoes, finely chopped or pureed
- 1 tablespoon ginger-garlic paste
- 2 green chilies, slit
- 1 teaspoon cumin seeds
- ½ teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1½ teaspoons coriander powder
- ½ teaspoon cumin powder
- ½ teaspoon black pepper powder
- 1 cup water, or as needed
- 2 tablespoons fresh coriander leaves, chopped
Optional Whole Spices
- 1 small bay leaf
- 1-inch piece cinnamon
- 2 green cardamom pods
Boil the Eggs
Place the eggs in a saucepan and cover them completely with water. Bring the water to a boil and cook for about 9–11 minutes. Transfer the eggs to cold water, allow them to cool, and peel them carefully.Make a few shallow cuts on each egg so the curry can penetrate the surface.
Prepare the Potatoes
Peel the potatoes and cut them into medium-sized chunks. Boil them until they are just tender but not falling apart.Drain the potatoes well.
Lightly Fry the Eggs and Potatoes
Heat 1 tablespoon of oil in a pan. Add a small amount of turmeric and salt, then gently add the boiled eggs.Roll the eggs around the pan until they become lightly golden. Remove and set aside.Add another tablespoon of oil and lightly fry the potatoes until they develop a golden exterior. Remove and keep aside.
Prepare the Masala
Heat the remaining oil in a deep pan. Add cumin seeds and optional whole spices. Allow them to sizzle for a few seconds.Add the chopped onions and sauté until they become soft and golden. Add ginger-garlic paste and green chilies. Cook for 1–2 minutes until fragrant.
Add the Spices and Tomatoes
Add turmeric powder, red chili powder, coriander powder, cumin powder, and a little salt.Stir quickly over low heat so the spices do not burn.Add the tomatoes and cook until they become soft and the oil begins to separate from the masala.
Make the Curry
Add the fried potatoes and mix thoroughly with the masala. Pour in about 1 cup of water and bring the curry to a gentle simmer.Cover and cook for 8–10 minutes, allowing the potatoes to absorb the spices and the gravy to thicken.
Add the Eggs
Gently place the fried boiled eggs into the curry. Spoon some gravy over the eggs.Simmer uncovered for another 5–7 minutes.
Finish and Serve
Sprinkle garam masala and black pepper powder over the curry. Turn off the heat and garnish with fresh coriander leaves.Allow the curry to rest for 5 minutes before serving.Serve hot with steamed rice, jeera rice, chapati, roti, or naan.
