Ingredients
  

  • 2 cups heavy cream
  • 1 cup whole milk
  • 6 large egg yolks
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • Pinch of salt

Instructions
 

  • Heat cream, milk, and half the sugar in a saucepan until warm.
  • Whisk egg yolks with the remaining sugar.
  • Slowly pour warm milk mixture into yolks while whisking.
  • Pour the mixture back into the saucepan.
  • Cook on low heat until it thickens slightly.
  • Cool the mixture completely.
  • Chill in the refrigerator for at least 3 hours.
  • Freeze for 2 hours before serving.

Notes

  • Use fresh nutmeg for stronger aroma.
  • Do not boil the custard or it may curdle.
  • Chill the mixture well before churning.
  • Add a splash of rum extract for an authentic flavour.
  • Store in an airtight container to prevent ice crystals.
