Ingredients
  

For the Eggplant

  • 2 large eggplants
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried Italian seasoning

For the Tomato Sauce

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 800 g crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon sugar, optional
  • 2 tablespoons fresh basil, chopped

For the Ricotta Filling

  • 450 g ricotta cheese
  • 1 large egg
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

For Layering

  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions
 

Prepare the Eggplant

  • Wash and dry the eggplants.
    Cut them lengthwise into slices approximately ¼-inch thick.
    Arrange the slices on a baking sheet.
    Lightly sprinkle them with salt and allow them to sit for about 15 minutes. Pat away any moisture that appears on the surface.
    Brush both sides lightly with olive oil and season with black pepper and Italian seasoning

Roast the Eggplant

  • Preheat the oven to 425°F (220°C).
    Roast the eggplant slices for approximately 20–25 minutes, turning them halfway through cooking.
    They should become tender and lightly browned around the edges.
    Remove from the oven and set aside.

Prepare the Tomato Sauce

  • Heat olive oil in a saucepan over medium heat.
    Add the chopped onion and cook for 4–5 minutes until softened.
    Add the minced garlic and cook for approximately 30 seconds.
    Stir in the tomato paste.
    Add crushed tomatoes, oregano, basil, salt, black pepper, and optional red pepper flakes.
    Simmer for approximately 15–20 minutes, stirring occasionally.
    If the sauce tastes overly acidic, add a small amount of sugar.

Prepare for Layering

  • Reduce the oven temperature to 375°F (190°C).
    Lightly grease a 9 × 13-inch baking dish.
    Spread a thin layer of tomato sauce over the bottom.

Add the First Eggplant Layer

  • Arrange a layer of roasted eggplant slices over the sauce.
    Try to overlap them slightly so the layer is well covered.

Add the Ricotta

  • Spoon portions of the ricotta mixture over the eggplant.
    Spread it gently into an even layer.
    Add some shredded mozzarella.

Bake

  • Cover the baking dish loosely with aluminum foil.
    Bake for approximately 25 minutes.
    Remove the foil and continue baking for another 15–20 minutes, or until the cheese is melted, bubbling, and golden brown.

Rest Before Serving

  • Remove the lasagna from the oven and allow it to rest for 15–20 minutes.
    This step is important because it allows the layers to set, making the lasagna much easier to slice.
    Garnish with fresh basil or parsley and serve warm.

Notes

  • Choose firm eggplants: Fresh, firm eggplants provide better texture.
  • Slice evenly: Uniform slices cook more consistently.
  • Roast before layering: This helps reduce excess moisture.
