  • 4 English muffins, split and toasted
  • 8 slices bacon, cooked until crisp
  • 8 large eggs
  • 2 tablespoons white vinegar
  • Fresh chives, finely chopped (for garnish)
  • Paprika (optional)

For the Hollandaise Sauce

  • 3 large egg yolks
  • 1 tablespoon lemon juice
  • 1/2 cup unsalted butter, melted and warm
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper (optional)

Instructions
 

  • Cook the bacon in a skillet over medium heat until crisp. Transfer to paper towels to drain.
  • In a heatproof bowl, whisk together egg yolks and lemon juice. Place the bowl over simmering water and whisk continuously. Slowly drizzle in the melted butter until the sauce becomes thick and creamy. Season with salt and cayenne pepper. Keep warm.
  • Bring a saucepan of water to a gentle simmer and add vinegar. Crack each egg into a small bowl and slide it into the water. Cook for 3 to 4 minutes until the whites are set and yolks remain runny.
  • Toast the English muffins until golden brown.
  • Top each muffin half with two slices of bacon, one poached egg, and a spoonful of hollandaise sauce.
  • Sprinkle with chopped chives and paprika. Serve immediately while warm.
