Ingredients
  

  • 200 g (7 oz) dark chocolate (60–70% cocoa), chopped
  • 3 large eggs, separated
  • 2 tablespoons granulated sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

  • Place chopped chocolate in a heatproof bowl and melt gently over simmering water or in short microwave bursts. Let cool slightly.
  • Beat the heavy cream and vanilla until soft peaks form. Refrigerate.
  • Whisk egg yolks with half the sugar until pale and slightly thickened. Stir into the melted chocolate.
  • Beat egg whites with salt until foamy. Gradually add remaining sugar and beat until glossy stiff peaks form.
  • Fold whipped cream into the chocolate mixture, then gently fold in the egg whites until no streaks remain.
  • Spoon into serving glasses and refrigerate for at least 4 hours or overnight.
  • Top with whipped cream, chocolate shavings, and berries before serving.
