Ingredients
  

  • 2 pounds chicken thighs and drumsticks
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 1 cup water
  • 8 cloves garlic, crushed
  • 3 bay leaves
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon whole black peppercorns
  • 2 tablespoons vegetable oil
  • 1 tablespoon brown sugar (optional)
  • 2 green onions, sliced for garnish
  • Steamed rice, for serving

Instructions
 

  • In a large bowl, combine chicken, soy sauce, and garlic. Marinate for at least 30 minutes.
  • Heat oil in a large pot. Remove chicken from the marinade and brown on both sides.
  • Pour in the reserved marinade, vinegar, water, bay leaves, and peppercorns.
  • Bring to a gentle boil without stirring for 2–3 minutes, then reduce heat and simmer uncovered for 35–40 minutes.
  • Add brown sugar if desired and simmer until the sauce thickens slightly.
  • Garnish with green onions and serve hot over steamed rice.
