  • 1 small onion, diced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 cup mushrooms, sliced
  • 1 cup fresh spinach
  • 1 cup sweet corn kernels
  • 1 teaspoon garlic, minced
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • Black pepper to taste

For the Quesadillas

  • 8 flour tortillas
  • 2½ cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter or olive oil for cooking

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add onions and cook for 2–3 minutes until softened.
  • Add zucchini, mushrooms, bell peppers, and corn. Cook for about 6 minutes.
  • Stir in garlic, cumin, chili powder, salt, and pepper.
  • Add spinach and cook until just wilted.
  • Remove vegetables from heat and allow them to cool slightly.
  • Heat another skillet or griddle over medium heat.
  • Place one tortilla on the skillet.
  • Sprinkle cheese evenly over half the tortilla.
  • Top with additional cheese.
  • Cook 2–3 minutes per side until golden brown and crispy.
  • Slice into wedges and serve immediately.
