- 4 salmon fillets (6 oz each)
- Salt and black pepper, to taste
- 1 tbsp olive oil or sesame oil
For the Ginger Glaze:
- 2 tbsp soy sauce
- 1 tbsp honey or maple syrup
- 1 tbsp rice vinegar or lemon juice
- 1 tbsp freshly grated ginger
- 1 clove garlic, minced
- ½ tsp cornstarch mixed with 1 tbsp water (optional, for thickening)
Prepare the glaze:In a small bowl, mix soy sauce, honey, vinegar, grated ginger, and minced garlic. Set aside.
Cook the salmon:Season salmon fillets with salt and pepper. Heat oil in a skillet over medium-high heat. Add salmon skin-side down and cook for 3–4 minutes until crispy. Flip and cook for another 2–3 minutes until nearly done.
Add the glaze:Pour the ginger glaze over the salmon in the skillet. Let it bubble and thicken, coating the fillets evenly. (Add the cornstarch slurry if you prefer a thicker glaze.) Finish and serve:Remove from heat once the glaze is glossy and slightly sticky. Serve salmon hot, drizzled with extra glaze.
- Fresh ginger makes a big difference — avoid powdered ginger here.
- Use tamari or coconut aminos for a gluten-free version.
- Don’t overcook salmon; it should stay moist inside.
- Add a pinch of chili flakes for a little heat.
- Great served with rice, steamed veggies, or noodles.
