Ingredients
  

  • 1 sheet puff pastry, thawed
  • ⅓ cup fig preserves
  • 4 ounces goat cheese, softened
  • 4 ounces thinly sliced prosciutto
  • 1 tablespoon fresh thyme leaves
  • 1 egg
  • 1 tablespoon water
  • Freshly ground black pepper to taste

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Lightly flour a surface and roll the puff pastry into a rectangle.
  • Evenly spread fig preserves over the pastry, leaving a small border around the edges. Crumble or spread the softened goat cheese evenly over the preserves.
  • Arrange slices of prosciutto over the goat cheese layer. Sprinkle with fresh thyme leaves and a small amount of black pepper.
  • Starting from one long side, tightly roll the pastry into a log.
  • Wrap the log in plastic wrap and refrigerate for 15 minutes to make slicing easier.
  • Cut the chilled log into approximately ½-inch thick slices and place them on the prepared baking sheet.
  • Whisk together the egg and water. Brush the tops of the pinwheels with the egg wash.
  • Bake for 18–20 minutes or until puffed and golden brown.
  • Allow to cool slightly before serving warm or at room temperature.
