Ingredients

For the cake

  • 1½ cups all-purpose flour
  • 1 cup whole-milk ricotta cheese
  • ¾ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 3 large eggs, at room temperature
  • 1½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon finely grated lemon zest
  • ¼ teaspoon salt

For the fig topping

  • 6–8 fresh ripe figs
  • 1 tablespoon granulated sugar
  • 1 tablespoon honey (optional)
  • ¼ cup sliced almonds (optional)
  • 1 tablespoon powdered sugar, for serving

Instructions

  • Preheat the oven to 175°C (350°F). Grease a 9-inch round cake pan and line the bottom with parchment paper. This helps prevent sticking and makes it easier to remove the cake after baking.
  • Wash and gently dry the fresh figs. Remove the stems and slice the figs into halves or quarters, depending on their size. Set aside a few attractive slices for the top of the cake. If the figs are exceptionally juicy, gently blot their surfaces with a paper towel.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. Evenly distributing the baking powder helps the cake rise consistently.
  • In a large mixing bowl, beat the softened butter and granulated sugar until the mixture becomes pale and fluffy. This usually takes about 2–3 minutes with an electric mixer.
  • Add the eggs one at a time, beating after each addition. Mix in the vanilla extract, lemon zest, and optional lemon juice. The lemon adds a refreshing flavor that complements the sweetness of the figs.
  • Add the ricotta cheese and mix on low speed until the batter is smooth. If the ricotta contains excess liquid, drain it briefly before measuring to prevent the batter from becoming too wet.
  • Gradually fold the dry ingredients into the wet mixture using a spatula. Mix just until no large streaks of flour remain. Avoid overmixing, as this can make the finished cake dense.
  • Gently fold half of the chopped figs into the batter. Transfer the batter to the prepared cake pan and spread it evenly. Arrange the remaining fig slices on top, pressing them lightly into the surface.
  • Sprinkle a little sugar over the figs to encourage light caramelization during baking. Add sliced almonds if desired. You can reserve the honey for drizzling over the cake after baking.
  • Bake for 45–55 minutes, or until the top is golden and a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, loosely cover it with aluminum foil during the final part of baking.
  • Remove the cake from the oven and let it rest in the pan for 15–20 minutes. Carefully transfer it to a wire rack and allow it to cool further before slicing. The ricotta helps keep the crumb moist, so allow enough time for the cake to set.
  • Dust the cooled cake with powdered sugar. Drizzle with a little honey if desired, and serve with whipped cream or Greek yogurt. For the best flavor, enjoy the cake slightly warm or at room temperature.

Notes

  • Use quality ricotta: Whole-milk ricotta generally gives the cake a richer flavor and softer texture.
  • Drain watery ricotta: Excess moisture can affect the cake's consistency.
  • Choose ripe figs: Firm-ripe figs hold their shape better during baking.
  • Measure flour carefully: Too much flour can make the cake dry.
  • Avoid overmixing: Fold the flour in gently to maintain a tender crumb.
  • Adjust sweetness: Very ripe figs are naturally sweet, so the sugar can be reduced slightly if desired.
  • Check the center: A toothpick should come out clean or with a few moist crumbs, not wet batter.
  • Refrigerate leftovers: Because the cake contains ricotta, refrigerate it in an airtight container once cooled.
