For the Kabobs
- 1½ pounds boneless, skinless chicken breasts or thighs, cut into 1½-inch pieces
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 medium red onion, cut into chunks
- 8 ounces mushrooms, halved, optional
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
For the Firecracker Glaze
- ⅓ cup honey
- ¼ cup hot sauce
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon crushed red pepper flakes
- ½ teaspoon ground ginger
- ¼ teaspoon black pepper
For Serving
- Fresh cilantro or parsley
- Lime wedges
- Extra hot sauce, optional
- Sesame seeds, optional
Trim any excess fat from the chicken and cut it into evenly sized pieces. Keeping the pieces similar in size helps them cook at the same rate.
In a separate bowl, whisk together honey, hot sauce, soy sauce, lime juice, olive oil, minced garlic, smoked paprika, red pepper flakes, ginger, and black pepper.
Pour approximately two-thirds of the glaze over the chicken. Toss until every piece is well coated.Cover and refrigerate for 30 minutes.Reserve the remaining glaze separately for brushing during grilling. Never reuse sauce that has contacted raw chicken unless it is thoroughly cooked first. Wash and cut the bell peppers and red onion into pieces approximately the same size as the chicken.
Thread the chicken, peppers, onions, and mushrooms onto the skewers, alternating the ingredients for a colorful presentation.
Preheat your grill to approximately 400–450°F (200–230°C). Clean the grates and lightly oil them to reduce sticking.
Place the kabobs on the grill and cook for approximately 12–16 minutes, turning every few minutes for even browning.
The vegetables should be tender-crisp with attractive charred edges.
Remove the kabobs from the grill and allow them to rest for about 3–5 minutes.
Garnish with fresh cilantro or parsley, sesame seeds, and lime wedges. Serve immediately.
