- 2 tablespoons unsalted butter, melted
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 lemon, thinly sliced
- 1 teaspoon dried Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup cherry tomatoes, halved
- ½ small red onion, thinly sliced
- 2 tablespoons fresh parsley, chopped
Preheat your oven to 400°F (200°C). Place a large baking sheet on your work surface.
Pat the fish fillets dry with paper towels. Removing excess moisture helps the seasonings adhere better and prevents the finished dish from becoming watery.
In a small bowl, combine the melted butter, olive oil, minced garlic, lemon juice, Italian seasoning, paprika, salt, and black pepper.
