Ingredients
  

  • 3–4 lbs pork shoulder (boneless or bone-in)
  • 1 cup hot salsa or chipotle sauce
  • ½ cup BBQ sauce or tomato sauce (optional for balance)
  • 1 small onion, sliced
  • 4 garlic cloves, minced
  • 1 tbsp smoked paprika
  • 1 tsp cumin
  • 1 tsp chili powder (adjust to taste)
  • Salt and pepper, to taste
  • ½ cup water or broth
  • Optional Toppings: Fresh cilantro, lime, pickled onions, avocado

Instructions
 

  • Prepare the pork:Trim excess fat from pork. Pat dry and season generously with salt, pepper, paprika, cumin, and chili powder.
  • Layer the slow cooker:Place sliced onion and garlic on the bottom. Add the pork on top.
  • Add sauces:Pour salsa (and BBQ or tomato sauce, if using) over the pork. Add water or broth.
  • Cook:Cover and cook on low for 8 hours or high for 4–5 hours until pork is tender and easy to shred.
  • Shred and mix:Remove pork, shred with two forks, and return to the pot. Stir to combine with juices.
  • Serve:Serve hot in tacos, bowls, sandwiches, or alongside rice.

Notes

  • Adjust the level of heat by choosing a milder or hotter salsa/sauce.
  • If pork is too fatty, skim off excess fat from the top after cooking.
  • Leftovers freeze beautifully for up to 3 months.
