Flaming Slow Cooker Pork

- 3–4 lbs pork shoulder (boneless or bone-in)
- 1 cup hot salsa or chipotle sauce
- ½ cup BBQ sauce or tomato sauce (optional for balance)
- 1 small onion, sliced
- 4 garlic cloves, minced
- 1 tbsp smoked paprika
- 1 tsp cumin
- 1 tsp chili powder (adjust to taste)
- Salt and pepper, to taste
- ½ cup water or broth
- Optional Toppings: Fresh cilantro, lime, pickled onions, avocado
Prepare the pork:Trim excess fat from pork. Pat dry and season generously with salt, pepper, paprika, cumin, and chili powder.
Layer the slow cooker:Place sliced onion and garlic on the bottom. Add the pork on top.
Add sauces:Pour salsa (and BBQ or tomato sauce, if using) over the pork. Add water or broth.
Cook:Cover and cook on low for 8 hours or high for 4–5 hours until pork is tender and easy to shred.
Shred and mix:Remove pork, shred with two forks, and return to the pot. Stir to combine with juices.
Serve:Serve hot in tacos, bowls, sandwiches, or alongside rice.
