Ingredients
  

  • 1½ cups rolled oats
  • 1 cup milk (dairy or plant-based)
  • 2 eggs
  • 2 tbsp honey or sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon (optional)
  • 1 tsp vanilla extract2 tbsp melted butter or oil

Instructions
 

  • Blend oats into a fine flour using a blender or food processor.
  • In a bowl, whisk eggs, milk, honey, and vanilla.
  • Add oat flour, baking powder, baking soda, cinnamon, and salt; mix well.
  • Stir in melted butter or oil.
  • Heat a non-stick pan over medium heat and lightly grease it.
  • Pour batter onto the pan to form pancakes.
  • Cook until bubbles appear on the surface, then flip.
  • Cook the other side until golden and fully cooked.
  • Serve warm with toppings of choice.
