Ingredients
  

  • 1 standing rib roast (4 to 7 ribs, about 8–10 lbs)
  • 2 tbsp kosher salt
  • 2 tbsp freshly ground black pepper
  • 2 tbsp olive oil
  • 1 tbsp garlic powder
  • 1 tbsp fresh rosemary (optional)
  • 1 tbsp fresh thyme (optional)

Instructions
 

  • Preheat your oven to 500°F (260°C).
  • Pat the rib roast dry with paper towels. Place it bone-side down in a roasting pan.
  • In a bowl, mix salt, pepper, garlic powder, and olive oil to form a paste.
  • Rub the mixture evenly over the roast. Add rosemary and thyme if desired.
  • Place roast in the oven and cook at 500°F for 15 minutes.
  • Reduce heat to 325°F (165°C) and continue cooking for about 1 ¾ to 2 hours, or until internal temperature reaches 125°F (52°C) for medium-rare.
  • Remove from oven, tent with foil, and let rest for 30 minutes before carving.

Notes

Always use a meat thermometer to check doneness to avoid overcooking. Resting is essential to retain juices.
