standing rib roast (4 to 7 ribs, about 8–10 lbs)

kosher salt

tbsp
freshly ground black pepper

tbsp
olive oil
1
tbsp
garlic powder
1
tbsp
fresh rosemary (optional)
1
tbsp
fresh thyme (optional)
Instructions
Preheat your oven to 500°F (260°C).
Pat the rib roast dry with paper towels. Place it bone-side down in a roasting pan.
In a bowl, mix salt, pepper, garlic powder, and olive oil to form a paste.
Rub the mixture evenly over the roast. Add rosemary and thyme if desired.
Place roast in the oven and cook at 500°F for 15 minutes.
Reduce heat to 325°F (165°C) and continue cooking for about 1 ¾ to 2 hours, or until internal temperature reaches 125°F (52°C) for medium-rare.
Remove from oven, tent with foil, and let rest for 30 minutes before carving.
Notes
Always use a meat thermometer to check doneness to avoid overcooking. Resting is essential to retain juices.
