Fortune cookies are thin, crisp cookies with a sweet vanilla flavor.Each cookie contains a small paper message or “fortune.”They are commonly served after meals in Chinese-American restaurants.Light, fun, and symbolic, they are loved by all ages.

Ingredients
  

  • 2 egg whites
  • ½ cup sugar
  • ½ cup all-purpose flour
  • 3 tbsp melted butter or neutral oil
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • 2 tbsp waterPinch of salt

Instructions
 

  • Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
  • In a bowl, whisk egg whites until foamy but not stiff.
  • Add sugar, melted butter, vanilla extract, almond extract, water, and salt. Mix well.
  • Gradually stir in flour until a smooth batter forms.
  • Spoon small circles of batter onto the tray and spread thinly.
  • Bake for 8–10 minutes until edges turn golden.
  • Quickly remove each cookie, place a fortune slip in the center, fold in half, then bend over the rim of a cup to shape.
  • Allow cookies to cool completely to become crisp.

Notes

  • Work quickly while cookies are hot to shape them properly.
  • Use parchment paper to prevent sticking.
  • Keep fortunes small and heat-safe.
  • Bake only a few cookies at a time for easy shaping.
  • Cookies crisp up as they cool.
