Ingredients
  

  • ¾ cup granulated sugar
  • ½ cup unsalted butter (melted and cooled)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 large apples (peeled, cored, and diced)

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and line a round cake pan.
  • In a bowl, whisk sugar and eggs until pale and fluffy.
  • Add melted butter and vanilla; mix well.
  • Sift in flour, baking powder, and salt. Stir until just combined.
  • Fold in diced apples gently.
  • Pour batter into prepared pan and smooth the top.
  • Bake for 40–45 minutes or until golden and a toothpick comes out clean.
