Ingredients
  

  • 1 lb fresh green beans, trimmed and cut in half
  • 2 large yellow onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 cup mushrooms, sliced (optional)
  • 2 cloves garlic, minced
  • 1 cup beef or vegetable broth
  • ½ cup heavy cream
  • 1 cup shredded Gruyère or Swiss cheese

Instructions
 

  • Preheat Oven: Set to 375°F (190°C).
  • Cook Green Beans: Boil in salted water for 5 minutes until tender-crisp. Drain and set aside.
  • Caramelize Onions: In a skillet, melt butter and olive oil. Add onions and cook on low heat for 20 minutes until golden brown. Add garlic and mushrooms; cook for 5 more minutes.
  • Create Sauce: Sprinkle flour over onions. Stir, then add broth and cream. Simmer until thickened. Season with salt and pepper.
  • Combine: Mix green beans with the onion sauce. Stir in half of the cheese.
  • Bake: Transfer to a baking dish. Top with remaining cheese and crispy onions. Bake uncovered for 20 minutes until bubbly and golden.
