Ingredients
  

  • 1 (3-4 lb) beef roast (preferably ribeye or sirloin)
  • 2 tbsp olive oil
  • 1 tbsp kosher salt
  • 1 tbsp freshly ground black pepper
  • 4 garlic cloves, minced
  • 1 tbsp fresh rosemary or thyme (or 1 teaspoon dried)
  • 1/2 cup red wine (optional)
  • 1/2 cup beef broth
  • 2 tbsp butter (optional for added richness)

Instructions
 

  • 1. Preheat the Oven: Preheat your oven to 450°F (230°C).
  • 2.Prepare the Roast:
    Pat the roast dry with paper towels. This helps to get a good sear. Rub the entire roast with olive oil, then season generously with salt, pepper, minced garlic, and fresh rosemary or thyme.
  • 3.Sear the Roast:
    Heat a large oven-safe skillet over medium-high heat. Once hot, add the roast and sear on all sides until a deep brown crust forms, about 2-3 minutes per side.
  • 4.Roast in the Oven:
    Transfer the skillet with the seared roast to the preheated oven. Roast for 15 minutes, then reduce the heat to 350°F (175°C) and continue roasting for another 45-60 minutes, depending on your preferred doneness. Use a meat thermometer to check the internal temperature:
    For medium-rare: 125°F (52°C)
    For medium: 135°F (57°C)
    For well-done: 150°F (66°C)
  • 5.Rest the Roast:
    Once done, remove the roast from the oven and let it rest, covered with foil, for 10-15 minutes. This allows the juices to redistribute.
  • 6.Make the Sauce (Optional):
    While the roast rests, place the skillet back on the stove over medium heat. Add the red wine and beef broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 5-7 minutes to reduce slightly. Stir in butter for a richer sauce, then season to taste with salt and pepper.
  • 7.Serve:
    Slice the roast against the grain, drizzle with the sauce, and serve hot. Enjoy your delicious French roast
