For the Crust
- 1¼ cups all-purpose flour
- 1 tbsp sugar
- ½ tsp salt
- ½ cup cold unsalted butter (cubed)
- 3–4 tbsp ice water
For the Peach Filling
- 3–4 fresh peaches (sliced)
- ¼ cup brown sugar
- 1 tbsp cornstarch
- 1 tsp lemon juice
- ½ tsp cinnamon
For Topping
- 1 egg (beaten, for egg wash)
- 1 tbsp coarse sugar (optional)
In a bowl, mix flour, sugar, and salt. Add butter and rub until crumbly.
Add ice water gradually to form a dough. Wrap and chill for 30 minutes.
Preheat oven to 190°C (375°F).
Mix peaches with sugar, cornstarch, lemon juice, cinnamon, and vanilla.
Roll dough into a circle on parchment paper.
Arrange filling in the center, leaving a 2-inch border.
Fold edges over the filling gently.
Brush crust with egg wash and sprinkle sugar.
Bake for 35–40 minutes until golden brown.
