Ingredients
  

For the Crust

  • 1¼ cups all-purpose flour
  • 1 tbsp sugar
  • ½ tsp salt
  • ½ cup cold unsalted butter (cubed)
  • 3–4 tbsp ice water

For the Peach Filling

  • 3–4 fresh peaches (sliced)
  • ¼ cup brown sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice
  • ½ tsp cinnamon

For Topping

  • 1 egg (beaten, for egg wash)
  • 1 tbsp coarse sugar (optional)

Instructions
 

  • In a bowl, mix flour, sugar, and salt. Add butter and rub until crumbly.
  • Add ice water gradually to form a dough. Wrap and chill for 30 minutes.
  • Preheat oven to 190°C (375°F).
  • Mix peaches with sugar, cornstarch, lemon juice, cinnamon, and vanilla.
  • Roll dough into a circle on parchment paper.
  • Arrange filling in the center, leaving a 2-inch border.
  • Fold edges over the filling gently.
  • Brush crust with egg wash and sprinkle sugar.
  • Bake for 35–40 minutes until golden brown.

  • Use ripe but firm peaches for best texture.
  • Chill the dough to ensure a flaky crust.
  • Adjust sugar depending on peach sweetness.
  • Galette thickens more as it cools.
  • Serve warm or at room temperature.
