Ingredients
  

  • 3 cups well-fermented kimchi, roughly chopped
  • 1 tablespoon kimchi juice
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 teaspoon sugar
  • 1 teaspoon gochugaru, optional
  • 1 teaspoon soy sauce, optional
  • 2 green onions, chopped
  • 1 teaspoon toasted sesame seeds
  • ½ teaspoon black pepper, optional

Instructions
 

Prepare the Kimchi

  • Remove the kimchi from its container and roughly chop it into bite-sized pieces.
    Reserve a tablespoon or two of the kimchi juice. The fermented liquid adds excellent flavor and helps keep the finished dish moist.

Heat the Pan

  • Place a large skillet over medium heat and add the vegetable oil.
    Once the oil is warm, add the minced garlic and sliced onion.
    Stir-fry for about 1–2 minutes until fragrant and slightly softened.

Add the Kimchi

  • Add the chopped kimchi to the skillet and toss everything together.
    Cook over medium-high heat for approximately 4–5 minutes, stirring frequently. The kimchi should begin to soften and develop slightly caramelized edges.

Season the Kimchi

  • Add the kimchi juice, sugar, and gochugaru if using.
    For a deeper savory flavor, add a small amount of soy sauce.
    Stir thoroughly so that the seasoning coats all the kimchi.

Continue Stir-Frying

  • Reduce the heat slightly and continue cooking for another 3–4 minutes.
    The kimchi should become tender, glossy, and richly colored. If the pan becomes too dry, add another spoonful of kimchi juice or a splash of water.

Add Sesame Oil

  • Turn off the heat and drizzle the sesame oil over the cooked kimchi.
    Toss well to distribute the nutty aroma throughout the dish.

Garnish

  • Add the chopped green onions and toasted sesame seeds.
    Toss gently once more.

Serve

  • Transfer the Fried Kimchi to a serving bowl and serve warm.
    It pairs beautifully with steamed white rice, fried eggs, Korean barbecue, tofu, noodles, or other Korean side dishes.

Notes

  • Use older kimchi: Well-fermented and sour kimchi is ideal for stir-frying.
  • Kimchi juice: Adding a little kimchi juice gives the dish more fermented depth.
  • Sugar: A small amount helps balance sour kimchi without making it sweet.
  • Oil: Sesame oil is best added near the end to preserve its aroma.
  • Spice level: Gochugaru is optional because kimchi already contains chili.
  • Soy sauce: Add only a small amount because kimchi can already be quite salty.
  • Texture: Cook longer for softer kimchi or slightly less for a firmer texture.
  • Serving: Fried Kimchi tastes excellent both warm and at room temperature.
