Ingredients
  

  • 1 prepared pizza dough (12–14 inches)
  • 2 ripe peaches, sliced
  • 4 ounces pancetta, diced
  • 2 tablespoons olive oil
  • 8 ounces fresh mozzarella, sliced
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon fresh thyme leaves
  • Fresh basil leaves for garnish
  • Salt and freshly ground black pepper, to taste

Instructions
 

  • Preheat the oven to 475°F (245°C). Place a pizza stone or baking sheet in the oven while it heats.
  • Heat 1 tablespoon of olive oil in a skillet over medium heat.
  • Add the peach slices and cook for 2–3 minutes per side until lightly caramelized. Remove and set aside.
  • In the same skillet, cook the pancetta until crisp. Drain on paper towels.
  • Roll or stretch the pizza dough into a 12–14-inch circle.
  • Brush the dough lightly with the remaining olive oil.
  • Arrange the mozzarella evenly over the dough.
  • Sprinkle with Parmesan cheese and fresh thyme.
  • Transfer the pizza to the hot pizza stone or baking sheet and bake for 12–15 minutes, or until the crust is golden and the cheese is bubbly.
  • Remove the pizza from the oven and let it rest for 2 minutes.
  • Garnish with fresh basil, cracked black pepper, and an optional drizzle of balsamic glaze or hot honey before slicing and serving.
