For the Zucchini Flowers
- 12 fresh zucchini flowers
- Vegetable oil for frying
For the Batter
- 1 cup all-purpose flour
- ¾ cup sparkling water or cold water
- ¼ teaspoon salt
- 1 egg (optional for richer batter)
Optional Cheese Filling
- ½ cup ricotta cheese
- ¼ cup grated Parmesan cheese
- 1 tablespoon fresh basil, chopped
- Pinch of black pepper
Gently rinse the zucchini flowers under cool water. Carefully remove the stamens from inside each blossom and pat dry with paper towels.
Mix ricotta cheese, Parmesan cheese, basil, and black pepper in a bowl. Carefully spoon a small amount into each flower and gently twist the petals closed.
In a mixing bowl, whisk together flour, salt, and sparkling water until smooth. The batter should be light and slightly thin.
Heat about 2 inches of vegetable oil in a deep skillet or saucepan to 350°F (175°C).
Dip each zucchini flower into the batter, allowing excess batter to drip off.
Carefully place flowers into the hot oil. Fry for 2–3 minutes per side until golden brown and crisp.
Transfer fried flowers to a paper towel-lined plate to remove excess oil.
Sprinkle lightly with salt and serve immediately while warm and crispy.
