  • 2 medium zucchini
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup Italian-style breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

  • Wash the zucchini and slice into rounds or sticks approximately ¼-inch thick.
  • Place flour in one bowl. Beat eggs in a second bowl. In a third bowl, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  • Dredge each zucchini slice in flour, dip into egg, and coat thoroughly with the breadcrumb mixture.
  • Heat about 2 inches of vegetable oil in a deep skillet to 350°F (175°C).
