- 2 cups whole milk
- 2 cups heavy cream
- ¾ cup granulated sugar
- 6 large egg yolks
- ¼ teaspoon fine salt
- Fresh strawberries
- Blueberries
- Chocolate sauce
- Caramel sauce
- Chopped pecans or almonds
- Crushed cookies
In a medium saucepan, combine the milk, heavy cream, and half of the sugar. Heat over medium heat until steaming but not boiling.
In a separate bowl, whisk together the egg yolks and the remaining sugar until pale and smooth.
Slowly pour a small amount of the warm milk mixture into the egg mixture while whisking continuously to temper the eggs.
Gradually pour the tempered egg mixture back into the saucepan.
Cook over low heat, stirring constantly with a wooden spoon or silicone spatula until the custard thickens enough to coat the back of the spoon (about 170–175°F (77–80°C)).
Remove the custard from the heat and stir in the vanilla extract and salt.
Strain the custard through a fine-mesh sieve into a clean bowl to remove any cooked egg bits.
Cover and refrigerate for at least 4 hours, or preferably overnight, until thoroughly chilled.
Pour the chilled custard into an ice cream maker and churn according to the manufacturer's instructions (about 20–25 minutes).
Serve immediately for a soft-serve texture, or freeze for 2–3 hours for a firmer consistency.
- Use fresh, high-quality vanilla extract for the best flavor.

- Chilling the base thoroughly improves texture.
