Ingredients
  

  • 2 cups whole milk
  • 2 cups heavy cream
  • ¾ cup granulated sugar
  • 6 large egg yolks
  • ¼ teaspoon fine salt
  • Fresh strawberries

Instructions
 

  • In a medium saucepan, combine the milk, heavy cream, and half of the sugar. Heat over medium heat until steaming but not boiling.
  • In a separate bowl, whisk together the egg yolks and the remaining sugar until pale and smooth.
  • Slowly pour a small amount of the warm milk mixture into the egg mixture while whisking continuously to temper the eggs.
  • Gradually pour the tempered egg mixture back into the saucepan.
  • Cook over low heat, stirring constantly with a wooden spoon or silicone spatula until the custard thickens enough to coat the back of the spoon (about 170–175°F (77–80°C)).
  • Remove the custard from the heat and stir in the vanilla extract and salt.
  • Strain the custard through a fine-mesh sieve into a clean bowl to remove any cooked egg bits.
  • Cover and refrigerate for at least 4 hours, or preferably overnight, until thoroughly chilled.
  • Pour the chilled custard into an ice cream maker and churn according to the manufacturer's instructions (about 20–25 minutes).
  • Serve immediately for a soft-serve texture, or freeze for 2–3 hours for a firmer consistency.
