Ingredients
  

  • 1 ¾ cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup Fruity Pebbles cereal (plus extra for topping)

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix the dry ingredients:
    In a bowl, whisk together flour, baking powder, baking soda, and salt.
  • Cream the butter and sugar:
    In a separate bowl, beat butter and sugar until light and fluffy.
  • Add wet ingredients: Mix in the egg and vanilla extract until well combined.
  • Combine:
    Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in Fruity Pebbles:
    Gently mix in the cereal to evenly distribute.
  • Scoop and shape:
    Roll dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
  • Bake:
    Bake for 9-11 minutes until the edges are lightly golden.
  • Cool:
    Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
  • Enjoy!
    Serve warm or store in an airtight container.

Notes

  • For extra crunchy cookies, increase the Fruity Pebbles to ¾ cup.
  • The cookies will appear slightly underbaked when removed from the oven but will firm up as they cool.
