For the Taco Filling
- 1 lb (450 g) ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup water
- ½ cup shredded Monterey Jack cheese
For the Mini Tacos
- 24 mini corn or flour tortillas
- Cooking spray or 1 tablespoon olive oil

- 1 cup shredded lettuce
- ½ cup diced tomatoes
- ½ cup salsa
- ½ cup sour cream

Prepare the Beef
Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook for 2–3 minutes until softened.Add the garlic and cook for about 30 seconds.Add the ground beef and cook until browned, breaking it apart with a wooden spoon as it cooks.
Season the Filling
Drain excess grease if necessary.Add chili powder, cumin, paprika, oregano, salt, and black pepper. Pour in the water and stir well.Simmer for approximately 2–3 minutes until the seasoning is evenly distributed and the filling is moist but not watery.
Prepare the Tortillas
Preheat the oven to 400°F (200°C).Warm the mini tortillas briefly in the microwave or skillet so they become flexible.Lightly coat them with cooking spray or brush them with a small amount of olive oil.
