For the Farro
- 1½ cups farro
- 4 cups water or vegetable broth
- ½ teaspoon salt
Vegetables
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 avocado, sliced
- ½ red onion, thinly sliced
- 1 cup baby spinach or arugula
- ½ cup chickpeas (optional)
Balsamic Dressing
- ¼ cup balsamic vinegar
- 1 teaspoon honey or maple syrup
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and black pepper to taste
Rinse farro and cook in salted water or broth for 20–25 minutes until tender. Drain and let cool slightly.
Whisk balsamic vinegar, olive oil, honey, mustard, garlic, salt, and pepper until well combined.
Chop all vegetables and set aside.
