Ingredients
  

  • 6 large russet potatoes, peeled and cubed
  • 4 cloves garlic, roasted
  • ½ cup butter, softened
  • 1 cup sour cream
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ½ teaspoon salt
  • 2 tablespoons chopped chives (optional)

Instructions
 

  • Boil the potatoes: Cook cubed potatoes in salted water until tender, about 15 minutes.
  • Mash and mix: Drain, then mash with butter, roasted garlic, and warm milk until smooth.
  • Add flavor: Stir in sour cream, half the cheese, salt, and pepper.
  • Bake: Transfer to a greased casserole dish. Sprinkle remaining cheese on top.
  • Finish: Bake at 375°F (190°C) for 25–30 minutes until golden and bubbly. Garnish with chives.
