Ingredients

  • 2 slices country ham
  • ½ cup strong black coffee
  • 1 tablespoon butter (optional)
  • Freshly ground black pepper (optional)

Instructions

  • Heat a skillet over medium heat.
  • Place the country ham slices in the pan and fry until browned and slightly crispy (about 3–4 minutes per side).
  • Remove the ham and set aside, leaving the drippings in the skillet.
  • Carefully pour in the black coffee to deglaze the pan.
  • Stir and scrape up browned bits from the bottom.
  • Let the mixture simmer for 2–3 minutes until slightly reduced.
  • Add butter if desired for richness.
  • Serve the ham hot with redeye gravy poured over or on the side.

Notes

  • Country ham is very salty—no extra salt is needed.
  • Soaking ham briefly can reduce saltiness if desired.
  • Use strong coffee for the best flavor.
  • The gravy is thin, not thick like traditional gravies.
  • Cast iron skillets enhance flavor.
  • Butter is optional but adds richness.
  • Serve immediately for best taste.
  • Traditionally paired with biscuits or grits.
