Ingredients
  

For the Cookies

  • 115 g unsalted butter, softened
  • 120 g honey
  • 100 g granulated sugar
  • 1 teaspoon vanilla extract
  • 300 g all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon unsweetened cocoa powder, optional

For Finishing

  • Powdered sugar, optional
  • Melted chocolate, optional
  • Chopped almonds or hazelnuts, optional

Instructions
 

Prepare the Honey Mixture

  • Place the softened butter, honey, and sugar in a large mixing bowl. Beat until smooth and creamy.

Add the Egg and Vanilla

  • Add the egg and vanilla extract. Mix until fully incorporated.

Make the Dough

  • Gradually add the dry ingredients to the honey mixture. Mix until a soft dough forms.
    Do not overmix. The dough should be soft but not excessively sticky.

Roll the Dough

  • Preheat the oven to 175°C / 350°F.
    Lightly flour your work surface. Roll the dough to approximately 5–6 mm thick.
    Cut into rounds, hearts, stars, or other festive shapes using cookie cutters.

Prepare the Baking Sheet

  • Place the cookies on parchment-lined baking sheets, leaving approximately 3–4 cm between them.

Bake

  • Bake for 10–12 minutes, or until the edges are lightly golden.
    Avoid overbaking because honey cookies can become firm if left in the oven too long.

Cool

  • Allow the cookies to rest on the baking sheet for about 5 minutes. Transfer them to a wire rack and cool completely.

Decorate

  • Dust with powdered sugar or drizzle with melted chocolate. For a festive appearance, you can also decorate them with chopped almonds, hazelnuts, or a simple sugar glaze.

  • Use good-quality honey because it contributes significantly to the flavor.
  • Room-temperature butter combines more easily with the honey and sugar.
  • Chill the dough before rolling.
  • Avoid adding too much flour while rolling.
  • Keep the cookies a similar thickness so they bake evenly.
  • Honey causes cookies to brown quickly, so watch them carefully near the end of baking.
