Ingredients
  

For the Sponge Cake

  • 4 large eggs, room temperature
  • ¾ cup (150 g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup (125 g) all-purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1 teaspoon finely grated lemon zest

For the Strawberry Cream Filling

  • 1½ cups (225–250 g) fresh strawberries
  • 1½ cups (360 ml) heavy whipping cream, chille
  • ⅓ cup (40 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon strawberry jam, optional

  • Powdered sugar
  • Fresh strawberries
  • Mint leaves, optional

Instructions
 

Prepare the Oven and Baking Pan

  • Preheat the oven to 375°F (190°C).
    Line a 10×15-inch (25×38 cm) jelly-roll pan with parchment paper.
    Lightly grease the parchment so the sponge releases easily after baking.

Prepare the Eggs

  • Separate the eggs, placing the whites in a clean mixing bowl and the yolks in another bowl.
    Alternatively, you can use whole eggs and whip them with sugar until very light and fluffy.
    For the lightest traditional-style sponge, separating the eggs provides excellent volume.

Whip the Egg Whites

  • Beat the egg whites with a pinch of salt until soft peaks form.
    Gradually add half of the sugar and continue beating until the whites become glossy and hold firm peaks.
    Set aside.

Beat the Egg Yolks

  • In another bowl, beat the egg yolks with the remaining sugar and vanilla for approximately 2–3 minutes.
    The mixture should become pale, thick, and creamy.
    Add the lemon zest.

Combine the Sponge Batter

  • Sift together the flour and baking powder.
    Fold the dry ingredients gently into the egg yolk mixture.
    Add the whipped egg whites in two or three additions, folding carefully with a spatula.
    Do not stir aggressively because the air trapped in the egg whites helps the sponge rise.

Spread the Batter

  • Pour the batter onto the prepared baking sheet.
    Use an offset spatula to spread it evenly into the corners.
    Try to maintain an even thickness across the entire pan.

Prepare a Kitchen Towel

  • While the cake is baking, place a clean kitchen towel on the counter.
    Dust it generously with powdered sugar.
    This will be used to roll the hot sponge.

Prepare the Strawberries

  • Wash the strawberries gently and dry them thoroughly.
    Remove the green tops.
    Slice the strawberries into small pieces.
    Reserve several attractive whole or halved berries for decoration.

Prepare the Whipped Cream

  • Place the chilled heavy cream in a large bowl.
    Whip until it begins to thicken.
    Add the powdered sugar and vanilla.
    Continue whipping until firm peaks form.
    Do not overwhip.

Add the Strawberries

  • Gently fold most of the chopped strawberries into the whipped cream.
    If desired, spread a very thin layer of strawberry jam over the sponge before adding the cream for an extra strawberry flavor.

Roll the Cake Again

  • Starting from the same short end, gently roll the sponge around the strawberry cream.
    Use light but firm pressure to create a compact roll without squeezing out the filling.
    Place the roll seam-side down.

Chill

  • Wrap the strawberry roll loosely in plastic wrap and refrigerate for at least 1 hour.
    Chilling helps the cream firm and makes the cake easier to slice.

Decorate

  • Before serving, dust the roll lightly with powdered sugar.
    Decorate with fresh strawberries and optional mint leaves.
    For an extra-special presentation, add small whipped-cream rosettes along the top.

Slice and Serve

  • Use a sharp serrated knife to cut the cake into slices.
    Wipe the knife between cuts for clean edges and attractive strawberry-and-cream spirals.
    Serve chilled or slightly cool with coffee or tea.

Notes

  • Use fresh strawberries: Choose ripe but firm berries for the best flavor and texture.
  • Dry the strawberries well: Excess water can loosen the whipped cream filling.
  • Do not overbake: A dry sponge is more likely to crack during rolling.
  • Roll while warm: Rolling the sponge immediately after baking helps it adapt to the rolled shape.
  • Cool completely: The sponge should be completely cool before adding whipped cream.
  • Chill the cream: Cold heavy cream whips more easily and holds its shape better.
  • Leave an edge: Avoid spreading filling all the way to the edge because it will spread as the cake is rolled.
  • Serve chilled: Refrigeration helps the roll maintain its shape
