For the Stir-Fry
- 2 tablespoons vegetable oil
- 2 tablespoons fresh ginger, julienned or grated
- 3 cloves garlic, minced
- 1 medium onion, sliced
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 cup carrots, julienned
- 1 cup snow peas or green beans
For the Sauce
- ¼ cup vegetable stock or water
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce or vegetarian oyster sauce
- 1 teaspoon sugar
- 1 teaspoon cornstarch
- ½ teaspoon sesame oil
In a small bowl, mix all sauce ingredients and set aside.
Heat oil in a wok or large skillet over high heat.
Add ginger and garlic; stir-fry briefly until fragrant.
Add onion and carrots; stir-fry for 1–2 minutes.
Add broccoli, bell pepper, and snow peas; cook until crisp-tender.
Pour in the sauce and stir continuously until it thickens.
Toss vegetables well to coat evenly.
