Ingredients
  

For the Gingerbread Crust

  • 2 cups gingerbread cookie crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

For the Cheesecake Filling

  • 24 ounces cream cheese, softened
  • 1 cup brown sugar
  • 3 large eggs
  • ½ cup sour cream
  • ¼ cup molasses
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves

Instructions
 

  • Preheat oven to 325°F (165°C). Combine gingerbread cookie crumbs, sugar, and melted butter. Press firmly into the bottom of a 9-inch springform pan.
  • Bake for 10 minutes. Remove from oven and allow to cool.
  • Beat cream cheese until smooth and creamy. Add brown sugar and mix until fully incorporated.
  • Mix in eggs one at a time. Add sour cream, molasses, vanilla, ginger, cinnamon, nutmeg, and cloves. Blend until smooth.
  • Pour the cheesecake batter over the cooled crust and smooth the top.
  • Bake for 65–70 minutes, or until the edges are set and the center remains slightly jiggly.
  • Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.
  • Refrigerate for at least 6 hours or overnight.
  • Top with whipped cream, cookie crumbs, and a sprinkle of cinnamon before serving.
  • Slice and enjoy this festive holiday masterpiece.
