Ingredients

  • 1 cup gluten-free all-purpose flour
  • 2 eggs
  • 1 ½ cups milk (or plant-based milk)
  • 2 tbsp melted butter (or oil)
  • 1 tbsp sugar (optional)
  • ¼ tsp salt

For Orange Blossom Honey Butter:

  • ½ cup unsalted butter (softened)
  • 3 tbsp orange blossom honey
  • ½ tsp orange zest
  • ½ tsp vanilla extract (optional)

Instructions
 

  • In a bowl, whisk gluten-free flour, eggs, milk, melted butter, sugar, and salt.
  • Mix until smooth and lump-free.Let the batter rest for 10 minutes.
  • Heat a non-stick pan over medium heat.Pour a thin layer of batter and swirl evenly.
  • Cook for 1–2 minutes, flip, and cook the other side.Stack crepes and keep warm.
  • In a bowl, mix softened butter with orange blossom honey.
  • Add orange zest and vanilla extract.Whip until smooth and creamy.
  • Spread warm crepes with honey butter.Fold or roll as desired
  • Top with fruits, powdered sugar, or extra honey.Serve immediately.
