Ingredients
  

For the Chicken

  • 750 g chicken, preferably bone-in pieces
  • ½ teaspoon turmeric powder
  • 1 teaspoon salt
  • 1 tablespoon lemon juice

For the Green Cafreal Marinade

  • 1 packed cup fresh coriander leaves
  • ½ cup fresh mint leaves
  • 5–7 green chilies
  • 1-inch piece fresh ginger
  • 1 tablespoon lemon juice
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • ½ teaspoon black peppercorns
  • 4 cloves
  • 1-inch cinnamon stick
  • 3 green cardamoms
  • 2 tablespoons water, or as needed

For Cooking

  • 3 tablespoons oil
  • ½ cup sliced onion, optional
  • ¼ cup water, as needed
  • Fresh coriander for garnish
  • Lemon wedges for serving

Instructions
 

Prepare the Chicken

  • Wash and pat the chicken pieces completely dry. Make a few shallow cuts in the thicker pieces. This allows the marinade to penetrate more effectively.
    Add turmeric, salt, and lemon juice. Mix well and set aside for 15–20 minutes.

Toast the Whole Spices

  • Place cumin seeds, coriander seeds, black peppercorns, cloves, cinnamon, cardamom, and fennel seeds in a dry pan.
    Toast over low heat for 1–2 minutes until fragrant. Do not burn them.
    Allow the spices to cool slightly.

Make the Green Cafreal Paste

  • Add coriander leaves, mint leaves, green chilies, garlic, ginger, toasted spices, vinegar, lemon juice, and a little water to a blender.
    Blend into a smooth, thick green paste.
    Avoid adding too much water because a concentrated marinade will coat the chicken better.

Marinate the Chicken

  • Add the green Cafreal paste to the chicken and massage it thoroughly into every piece.
    Cover and refrigerate for at least 2 hours. For deeper flavor, marinate overnight.

Start Cooking

  • Heat oil in a wide, heavy-bottomed pan over medium heat.
    Add the marinated chicken pieces and arrange them in a single layer. Reserve any remaining marinade.
    Cook for approximately 5–7 minutes on each side until the chicken develops a lightly browned exterior.

Caramelize the Masala

  • Remove the lid and increase the heat slightly. Continue cooking until excess moisture evaporates and the green masala becomes thick and clings to the chicken.
    Allow the edges of the chicken to become lightly charred for an especially delicious flavor.

Garnish and Serve

  • Turn off the heat and garnish with fresh coriander.
    Serve immediately with lemon wedges, Goan pav, rice, pulao, or crispy potatoes.

Notes

  • Bone-in chicken: Bone-in pieces generally provide better flavor and remain juicy during cooking.
  • Fresh herbs: Use fresh coriander and mint for the best color and aroma.
  • Green chilies: Adjust the number according to your preferred level of heat.
  • Marination: Longer marination produces deeper flavor.
  • Water: Use only a small amount when blending the marinade.
  • Vinegar: Vinegar provides the characteristic tang associated with Cafreal.
  • Cooking: Avoid extremely high heat because the herb marinade can burn quickly.
  • Chicken temperature: Make sure the chicken is fully cooked before serving.
