For the Fish
- 600–700 g firm white fish, cut into medium pieces
- ½ teaspoon turmeric powder
- ½ teaspoon salt
- 1 tablespoon lemon juice
For the Goan Curry Paste
- 1 cup fresh grated coconut
- 5–6 dried red chilies
- 1 teaspoon cumin seeds
- ½ teaspoon black peppercorns
- ¼ teaspoon fenugreek seeds
- ½ teaspoon turmeric powder
- 1-inch piece ginger
- 1 small onion, chopped
- 1 tablespoon tamarind pulp
For Cooking
- 1 tablespoon coconut oil or vegetable oil
- 1 small onion, finely chopped
- 1–2 green chilies, slit
- 8–10 curry leaves
- Salt, to taste
- ½–1 cup water, as needed
For Garnishing
- Fresh coriander, optional

Marinate the Fish
Place the fish pieces in a bowl.Add turmeric, salt, and lemon juice. Gently coat the fish and let it rest for approximately 10–15 minutes while you prepare the curry paste.Avoid marinating the fish for too long in lemon juice because the acidity can affect its texture.
Prepare the Coconut Masala
Add fresh coconut, dried red chilies, coriander seeds, cumin seeds, black peppercorns, fenugreek seeds, turmeric, ginger, garlic, onion, and tamarind pulp to a blender.Add a little water and blend until you have a smooth, thick paste.
Start the Curry
Heat coconut oil in a wide, heavy-bottomed pan over medium heat.Add the chopped onion and sauté until softened and lightly golden.Add curry leaves and slit green chilies. Cook for about 30 seconds until fragrant.
Add the Curry Paste
Add the prepared coconut masala paste to the pan.Cook over medium heat for approximately 5–7 minutes, stirring frequently.The masala should become aromatic and slightly darker as it cooks.
Add the Fish
Carefully place the marinated fish pieces into the simmering curry.Gently shake the pan to distribute the gravy rather than stirring aggressively with a spoon. This helps prevent the fish from breaking apart.
Adjust the Flavor
Taste the curry and adjust the salt, tamarind, or chili according to your preference.If the curry is too tangy, add a small amount of coconut milk or water. If you want more tanginess, add a little extra tamarind.
Rest and Serve
Turn off the heat and allow the curry to rest for approximately 5 minutes.This gives the fish time to absorb some of the flavorful coconut gravy.Serve hot with steamed rice.
